Sweet & Savory Cranberry Sweet Potato Bites

Sweet potatoes, check. Goat cheese, check. Cranberries, check.

These are three ingredients you need for these delicious Sweet & Savory Cranberry Sweet Potato Bites. We love them because they’re the perfect swap for their less healthy cousin: potato skins.  Though delicious, potato skins are often loaded with things like bacon, sour cream, and way too much cheese — all of which can really add up in calories and fat.

But this Cranberry Sweet Potato bites healthier, and even more delicious. 

Sweet & Savory Cranberry Sweet Potato Bites Sweet potatoes are a fabulous fall and winter starchy vegetable. They are jam packed with vitamin A and vitamin C and they also contain plenty of fiber as well to keep your system running smoothly. Cranberries are an often overlooked, nutrient powerhouse.  They are loaded with antioxidants that will help fight free radical damage.  Free radical damage has been linked to various cancers, aging, and a variety of diseases.  You’re going to love this cranberry-sweet potato comb.

Sweet & Savory Cranberry Sweet Potato Bites To get started, first, you will want to preheat your oven to 400F.  Start by boiling the sweet potatoes in a pot of water for 10 minutes. Drain and allow to cool. Then slice through the sweet potatoes lengthwise into 1/2″ slices- each sweet potato should give about 4 slices.  On a baking sheet, lay the sweet potato slices, drizzle with olive oil and bake for 10 minutes and then flip over, and bake for another 10 minutes. While that’s baking, heat the coconut oil in a pan and add the fresh cranberries.  Allow to cook with the cover on for 2 minutes.  In a small bowl, combine the goat cheese and cooked cranberries. With a spoon, mash it all together.  Once the sweet potatoes are done, allow to cool for 5 minutes, then spread the cranberry cream onto each slice.  Top with black pepper, to taste. Enjoy!

Ingredients
  1. 2 medium sweet potatoes
  2. 1 teaspoon olive oil
  3. 1 teaspoon coconut oil
  4. 1/4 cup fresh cranberries
  5. 2 tablespoons of goat cheese
  6. Black pepper, to taste
Instructions
  1. Start by boiling the sweet potatoes in a pot of water for 10 minutes
  2. Drain and allow to cool
  3. Then slice through the sweet potatoes lengthwise into 1/2" slices. Each sweet potato should give about 4 slices
