Hearty Chipotle Spinach Frittata

Gone are the days of boring cereal and toast. Spice up your mornings with this Hearty Chipotle Spinach Frittata. It’s super easy to whip up for some Sunday meal prep or for that weekend brunch.

The eggs are loaded with protein and healthy fats that will keep you full all day long, while the veggies in this dish offer so many different nutrients. The mushrooms are an excellent source of selenium, which helps that bod prevent cellular damage. Dark leafy green vegetables like spinach are full of vitamin K to help with blood clotting and with iron, which helps to carry oxygen to the cells, leaving us energized for the day. You’ll definitely be waking up on the right side of the bed with this one. 

Hearty Chipotle Spinach Frittata

To get it all started, blend the tomato sauce and chipotle peppers and set aside. Also beat the eggs in a bowl and set aside. Heat your olive oil on a skillet, and add the onions and mushrooms. Sauté for 5 minutes over low heat, with the lid on. Then add 3 cups of spinach, and sauté for another 4-5 minutes. Add the eggs and chipotle tomato sauce into the skillet and mix well together. Lightly scramble within the skillet every 3-4 minutes, until most of the eggs are cooked. They should be good to go in around 10-15 minutes. Once that’s done, pop into the broiler for 3-5 minutes. Keep an eye on the frittata so it doesn’t burn! Once the top and edges are firm and browned, remove and top with salt and pepper to taste. Garnish with your favorite herbs! We used curly parsley for this one. Cilantro and fresh scallions also work well. Enjoy!

Ingredients
  1. 1/4 cup tomato sauce
  2. 2 chipotle peppers in adobo sauce
  3. 6 eggs
  4. 1 tablespoon olive oil
  5. 1/2 medium onion, chopped
  6. 1 portabella mushroom, chopped
  7. 3 cups spinach, chopped
  8. Salt & pepper to taste
  9. Fresh herbs (we used curly parsley)

    This looks great! I would like to try this, any suggestions on what to use in place of mushrooms?
