Crispy Stovetop Potato Rounds

Where my potato lovers at? We’re here to tell you that you’re in luck because these Crispy Stovetop Potato Rounds will hit the spot without all the extra oil from frying. 

Also, random fact…I consider myself to be pretty top of the line when it comes to cooking potatoes. It’s one of my favorite foods to cook, and my friends and family are forever patting me on the back for making the most delicious potato creations. These are no exception. These crispy potato rounds can be added to your brunch menu or you can toss em up for a savory side dish to dinner. These potatoes are simple, versatile, and totally delicious.

Often, potatoes get a bad rap. They’re vilified as a “white starch” and so many people think they shouldn’t have potatoes. Which sucks because potatoes fit perfectly into a healthy diet! They are a starchy vegetable, with vitamin C and potassium, and a good source of vitamin B6, manganese, and fiber. 

Crispy Stovetop Potato Rounds

The real beauty of this recipe comes from the crispy texture of the potatoes. We got it justtt right without frying, or having to crank up the oven. And today, I’m going to let you in on my top secret method. 

Crispy Stovetop Potato Rounds

Let’s get this party started. In a large pan, heat the olive oil, and once hot, add the potato rounds. Try to spread them out onto the pan so they all touch the surface. Cook over medium heat for 3-4 minutes or until golden, then flip with a spatula, and repeat on the other side. Once both sides are golden, place a lid on, lower the flame to low-medium, and cook for 5 minutes. Flip again, and cook another 5 minutes with the lid on. Now remove the lid, and cook for the last 5 minutes or until crisp and fully cooked. Add salt & cracked pepper to taste, and enjoy with your favorite dip!

Ingredients
  1. 5 small potatoes, sliced into 1/4" rounds (leave skin on)
  2. 2 tablespoons olive oil
  3. Salt and cracked pepper, to taste
Instructions
  1. In a large pan, heat the olive oil, and once hot, add the potato rounds
  2. Try to spread them out onto the pan so they all touch the surface
  3. Cook over medium heat for 3-4 minutes or until golden, then flip with a spatula, and repeat on the other side
  4. Once both sides are golden, place a lid on, lower the flame to low-medium, and cook for 5 minutes
  5. Flip again, and cook another 5 minutes with the lid on
  6. Now remove the lid, and cook for the last 5 minutes until golden, and fully cooked.
  7. Add salt & cracked pepper to taste, and enjoy with your favorite dip!
Notes
  1. Serve with your favorite dipping sauce (see link within post for chimichurri dip recipe seen in photo)
