Coconut Tofu Vegetable Red Curry

The cooler weather is coming, which means it’s time to warm up with comforting recipes like this Coconut Tofu Vegetable Red Curry. This is an homage to all of the delicious Thai curries I’ve had here in New York City. As much as I love going out for Thai food, I often end up feeling like I’ve had all of my sodium for the day, in just one meal. And this was my inspiration behind creating this recipe. I ventured out to create a curry that’s packed with flavor, nutrients, and isn’t 2000% sodium per serving LOL (real talk)

Coconut Tofu Vegetable Red Curry

For flavor, we’re using ginger, garlic, and other yummy ingredients. Ginger is the perfect ingredient for adding warmth and spice to meals, which is exactly what we did with this Coconut Tofu Vegetable Red Curry recipe. Ginger has been found to have anti-inflammatory properties.  When our bodies suffer from chronic inflammation, it can lead to diseases such as rheumatoid arthritis, digestive diseases, cancers, cardiovascular disease, and other diseases. So, anti-inflammatory foods (like ginger) may help alleviate these conditions.  Ginger has been found to help with stomach aches, nausea, asthma, arthritis, and high blood pressure.  Not to mention the delicious flavor that ginger adds to dishes!

The combination of garlic, ginger, beans, red peppers, and onions are going to create an awesome flavor that you’ll crave again and again.  Garlic has also been found to help with many diseases because of its antioxidant and antibacterial functions. Garlic may help fight hypertension, high cholesterol, infections, and cardiovascular disease. The garlic will also help add a nice punch of flavor to the dish. 

To get started on this recipe, fill a small bowl with corn starch, and add each tofu piece into the bowl so that all sides are lightly coated. As you coat each piece of tofu, assemble on a flat plate. Next, heat the coconut oil over medium heat in a large pan and add the turmeric. Heat for 30 seconds, and then add the tofu pieces. Cook for 2 minutes on each side, or until tofu is crisp and golden

Next add the onion, garlic, ginger, jalapeño, and red pepper slices to the same pan. Sauté for 2-3 minutes, over medium heat. Then add the curry paste and coconut milk. Stir in, and then add the string beans. Allow everything to cook with the lid on for 15 minutes. Once done cooking, add tamari, and top with fresh basil and scallions. Mix in, and enjoy with a side of brown rice or rice noodles!

Ingredients
  1. 1/2 block firm tofu, pressed & cut into 1" chunks
  2. Corn starch for dusting
  3. 1 tablespoon coconut oil
  4. 1 teaspoon turmeric
  5. 1/2 onion, sliced
  6. 3 cloves garlic, minced
  7. 1 tablespoon ginger, minced
  8. 1/2 jalapeño pepper, deseeded & chopped
  9. 1/2 red pepper, sliced into thin strips
  10. 2 tablespoons red curry paste
  11. 1 cup coconut milk
  12. 2 cups string beans
  13. 1/2 tablespoon tamari, to taste
Toppings
  1. 1/2 cup basil, finely chopped
  2. 2 scallion stalks, chopped
Instructions
