What you need:
- 1 can black beans (drain and rinse, low sodium is best)
- 1 cup uncooked quinoa
- 1.5 tablespoons cajon seasoning
- 2 cup of sliced cherry tomatoes
- 1/4 cup of chopped green onions
- 1 tablespoon olive oil
- 4 cloves of garlic
- Your favorite herb
What you do:
- Cook quinoa according to package directions
- Saute black beans and chopped garlic in olive oil
- Combine cooked quinoa + black beans and garlic in a bowel
- Add chopped tomatoes, green onions and your favorite herb
- This recipe takes all of 10 minutes to prepare but it will really blow your taste buds away
