Cajun Quinoa with Black Beans

What you need:

  • 1 can black beans (drain and rinse, low sodium is best)
  • 1 cup uncooked quinoa
  • 1.5 tablespoons cajon seasoning
  • 2 cup of sliced cherry tomatoes
  • 1/4 cup of chopped green onions
  • 1 tablespoon olive oil
  • 4 cloves of garlic
  • Your favorite herb

What you do:

  • Cook quinoa according to package directions
  • Saute black beans and chopped garlic in olive oil
  • Combine cooked quinoa + black beans and garlic in a bowel
  • Add chopped tomatoes, green onions and your favorite herb
  • This recipe takes all of 10 minutes to prepare but it will really blow your taste buds away
  • Enjoy!
